{"id":20805,"date":"2014-10-28T12:01:48","date_gmt":"2014-10-28T11:01:48","guid":{"rendered":"http:\/\/thetalentzone.co.uk\/musictv\/?p=20805"},"modified":"2014-10-28T12:06:15","modified_gmt":"2014-10-28T11:06:15","slug":"simon-rimmer-carrot-cake-with-cream-cheese-frosting-recipe-on-daily-brunch","status":"publish","type":"post","link":"http:\/\/thetalentzone.co.uk\/musictv\/20805\/simon-rimmer-carrot-cake-with-cream-cheese-frosting-recipe-on-daily-brunch\/","title":{"rendered":"Simon Rimmer Carrot Cake with cream cheese frosting recipe on Daily Brunch"},"content":{"rendered":"<p>Simon Rimmer makes carrot Cake with cream cheese frosting on Daily Brunch.<\/p>\n<p>The ingredients are: 250g plain flour, 2 tsp baking powder, 1 tsp salt, 1 tsp bicarbonate of soda, 150g light brown sugar, 50g walnuts, shells removed, 220g canned pineapple slices, chopped, 1 Handful sultanas, 2 ripe bananas, mashed, 1 passion fruit, pulp only, 150g carrots, grated, 150ml corn oil, 3 free-range eggs, 125g butter, softened, plus extra for greasing, 225g cream cheese, 450g icing sugar, 1 tsp vanilla extract, 100g creamed coconut, grated and 50g whole pecans, to decorate.<\/p>\n<p>To make the cake, preheat the oven to 160\u02daC\/Gas 2.<\/p>\n<p>Sift the flour, baking powder, salt and bicarbonate of soda into a bowl and mix well.<\/p>\n<p>Add the sugar, walnuts, pineapple, sultanas, mashed banana, passion fruit pulp, grated carrot, oil and eggs and mix well to completely combine.<\/p>\n<p>Pour the cake mixture into a greased 20cm\/8in cake tin and place into the oven to bake for 1-1\u00bc hours, or until cooked through. Test by pushing a skewer into the centre of the cake. If the skewer comes out clean the cake is ready.<\/p>\n<p>Remove from the oven when ready and allow to cool on a wire rack.<\/p>\n<p>For the icing, beat the butter and cheese together in a clean bowl until light and fluffy.<\/p>\n<p>Add sugar and vanilla extract and mix well, then add the coconut and mix again.<\/p>\n<p>Once the cake is cool, remove from the cake tin, cut in half horizontally and spread the icing in the middle and on top of the cake.<\/p>\n<p>Decorate the cake with a few whole pecans and serve in generous slices.<\/p>\n<p><a href=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2014\/10\/carrot-cake.png\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2014\/10\/carrot-cake.png\" alt=\"\" title=\"carrot cake\" width=\"570\" height=\"320\" class=\"aligncenter size-full wp-image-20808\" srcset=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2014\/10\/carrot-cake.png 570w, http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2014\/10\/carrot-cake-300x168.png 300w\" sizes=\"auto, (max-width: 570px) 100vw, 570px\" \/><\/a><\/p>\n<p><script type=\"text\/javascript\"><!--\ngoogle_ad_client = \"ca-pub-0466605792016836\";\n\/* food and drink *\/\ngoogle_ad_slot = \"3648486817\";\ngoogle_ad_width = 300;\ngoogle_ad_height = 250;\n\/\/-->\n<\/script><br \/>\n<script type=\"text\/javascript\"\nsrc=\"http:\/\/pagead2.googlesyndication.com\/pagead\/show_ads.js\">\n<\/script><\/p>\n","protected":false},"excerpt":{"rendered":"Simon Rimmer makes carrot Cake with cream cheese frosting on Daily Brunch.
