Irish honey cake with fairy butter and homemade honeycomb on Anna Haugh\u2019s Big Irish Food Tour.<\/p>\n<p>The ingredients for the Irish honey cake are: 150g salted butter, plus extra to grease, 60g dark muscovado sugar, 160g runny honey, 2 medium free-range eggs, beaten, 200g self-raising flour, sieved, 2 tsp ground cinnamon and \u00bd tsp ground ginger.<\/p>\n<p>For the fairy icing: 175g unsalted butter, 300g icing sugar, 2 tsp orange blossom water and \u00bd orange, zest only.<\/p>\n<p>For the honeycomb: butter, for greasing, 225g glucose, 225g caster sugar, 75g golden syrup and 25g bicarbonate of soda.<\/p>\n<p>For the honey syrup: \u00bd lemon, juice only, 3 tbsp runny honey and 2 tsp orange blossom water.<\/p>\n<p>To serve: 50g pistachio nuts, shelled and unsalted, roughly chopped and a few edible flowers, 1 tbsp fresh mint leaves, 1 orange, zest only and 1 lemon, zest only.<\/p>\n<p><a
