coconut sponge, passionfruit curd, whipped cream, and Italian meringue for a technical challenge on Junior Bake Off.<\/p>\n<p>The ingredients for the cake are: 120g salted butter, 120g caster sugar, 2 large eggs, 120g self-raising, 30g desiccated coconut and \u00bd tsp of coconut extract.<\/p>\n<p>For the passionfruit curd: 2 leaves platinum gelatine, 3 passionfruits, 2 large egg yolks, 80g caster sugar, 1 tsp cornflour and 80g cold unsalted butter, diced.<\/p>\n<p>For the Italian meringue coating: 2 large egg whites, 120g caster sugar, 30ml water, 200g desiccated coconut and 5-6 drops yellow food colouring.<\/p>\n<p>For the whipped cream: 100ml double cream.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\"
