{"id":17357,"date":"2014-07-23T12:55:54","date_gmt":"2014-07-23T11:55:54","guid":{"rendered":"http:\/\/thetalentzone.co.uk\/musictv\/?p=17357"},"modified":"2014-07-23T13:29:43","modified_gmt":"2014-07-23T12:29:43","slug":"gino-spicy-thai-prawn-curry-recipe-on-lets-do-lunch","status":"publish","type":"post","link":"http:\/\/thetalentzone.co.uk\/musictv\/17357\/gino-spicy-thai-prawn-curry-recipe-on-lets-do-lunch\/","title":{"rendered":"Gino D&#8217;acampo Spicy Thai prawn curry recipe on Let\u2019s Do Lunch with Mel"},"content":{"rendered":"<p>Gino D&#8217;acampo serves up a delicious looking spicy Thai prawn curry on Let\u2019s Do Lunch for actress Jodie Prenger. <\/p>\n<p>The ingredients are: 1 tbsp vegetable oil, 2 heaped tbsp massaman curry paste, I red chilli, finely chopped, 2 lemon grass stalks, bashed with the back of a knife, A few kaffir lime leaves (fresh or dried), 5cm piece of ginger, cut into thick slices, 2 x 400ml cans coconut milk, 200g new potatoes, cooked and halved, 400g prawns, shelled and de-veined, 1 -2 tsp brown sugar, fish sauce to taste, lime juice to taste, 250ml sticky rice \/ Jasmine, 500ml cold water, Salt and a few coriander leaves to garnish.<\/p>\n<p>To prepare the dish, place the rice and water in a pan with a tight fitting lid.<\/p>\n<p>Add a good pinch of salt then cover and simmer for 8 minutes or until the water has all been absorbed.<\/p>\n<p>Turn the heat off and leave to steam for 10 minutes with the lid on.<\/p>\n<p>Make the curry by heating a wok on a high heat. Add the oil then the paste to the pan and cook for 1 minute.<\/p>\n<p>Add the chunks of ginger, lime leaves, bruised lemongrass and chilli, then pour in the coconut milk.<\/p>\n<p>Simmer everything for 5 minutes allowing it to thicken slightly then add in the prawns and potatoes.
