{"id":17227,"date":"2014-07-20T13:16:33","date_gmt":"2014-07-20T12:16:33","guid":{"rendered":"http:\/\/thetalentzone.co.uk\/musictv\/?p=17227"},"modified":"2014-11-26T18:55:27","modified_gmt":"2014-11-26T17:55:27","slug":"simon-rimmer-avocado-cake-with-polenta-recipe-on-sunday-brunch","status":"publish","type":"post","link":"http:\/\/thetalentzone.co.uk\/musictv\/17227\/simon-rimmer-avocado-cake-with-polenta-recipe-on-sunday-brunch\/","title":{"rendered":"Simon Rimmer Avocado Cake with polenta Recipe on Sunday Brunch"},"content":{"rendered":"<p>Simon Rimmer makes avocado cake with polenta on Sunday Brunch.<\/p>\n<p>The ingredients are: 125g butter, 350g sugar, 150g ripe avocados, 2 eggs, 1 tsp vanilla, 175ml buttermilk, 375g flour, 65g polenta, Pinch of salt, 4g baking powder and 4g bicarbonate of soda.<\/p>\n<p>For the topping: 25g butter, 350g icing sugar, 1 tsp ground ginger and Zest 1 lime.<\/p>\n<p>To prepare the cake, preheat the oven to 180\u00b0C\/gas mark 4. In a bowl, beat the butter, sugar and avocado with an electric whisk for a full 5 minutes.<\/p>\n<p>Mix in the eggs, vanilla and buttermilk, then then fold in all the dry ingredients.<\/p>\n<p>Spoon into a greased and lined loaf tin and bake for 45 minutes.<\/p>\n<p>Allow the cake too cool completely once cooked.<\/p>\n<p>For the topping, whisk the butter, icing sygar and ginger together with an electric whisk, then spread on the cake.
