puree) tart with a Spanish style iced coffee on Marcus in the Med: Mallorca.<\/p>\n<p>The ingredients for the pastry are: 1 pack ready-rolled all-butter puff pastry, Splash of water, 1 egg yolk and 1 tbsp pork fat or butter.<\/p>\n<p>For the filling: 50g membrillo (quince pur\u00e9e), 4 tsp water, 25ml brandy, 20g butter, cubed, 2 Braeburn or Pink lady apples, halved and cored and Cr\u00e8me fra\u00eeche, to serve.<\/p>\n<p>For the Spanish Iced coffee: Ice cubes, 1 espresso shot, 1 dash semi-skimmed milk, Condensed milk, A pinch of fresh coffee beans, \u00bd tsp cinnamon, \u00bd tsp
