John Torode served up a tasty cheats satay sauce with cucumber salad and pan fried chicken skewers on this morning.<\/p>\n

The ingredients are: 8 chicken thighs, cut into long, thin strips , OR 32 large raw prawns, split and opened like a butterfly , OR 1 pork fillet, cut into long strips. <\/p>\n

For the marinade: 2 tbsp dark soy , 1 tsp soft brown sugar, 1 tsp peanut butter , 1 tsp sweet chilli sauce, 2 garlic cloves, peeled and crushed (or out of a jar), 200ml coconut milk from a tin, \u00bd tsp cumin , 1 tsp coriander , \u00bc tsp ground ginger (or fresh from a jar or grated) and 2 tsp sesame oil or veg oil. <\/p>\n

For the satay sauce: 3 heaped tbsp smooth peanut butter, 1 tbsp Soy sauce, \u00bd tsp chilli flakes, 100ml sweet chilli sauce, 1 tbsp fish sauce, or a pinch of salt, 200ml coconut milk, 1 tbsp light brown sugar, \u00bd tsp ground coriander and Juice of 1 lime, about 2 tbsp.<\/p>\n

To garnish the satay sauce: 1 tbsp roasted peanuts, pinch chilli flakes, 1 tbsp chopped fresh coriander and 1\/2 tsp sesame seeds.<\/p>\n

For the salad: 1 lettuce \u2013 butter lettuce, or iceberg, washed and pulled apart, 1 small red onion, peeled and cut into 8 petals, Half a cucumber, half peeled and thinly sliced and Peanuts or sesame seeds.<\/p>\n
