shallots, thinly sliced, 2 garlic cloves, crushed, 1 tbsp \ufb01nely grated fresh root ginger, \u00bd red chilli, deseeded and \ufb01nely chopped, 1\u20132 tbsp Thai green curry paste, 2 tsp \ufb01sh sauce, 1 tsp light muscovado sugar, 115g button mushrooms, sliced, 2 small pak choi, sliced into large pieces, \u00bd bunch fresh coriander, leaves chopped, 1 lime, juice only, 2 nests (100g) \ufb01ne
