Freddy Forster served up tasty lamb kofta with cucumber and mint dressing on Steph’s Packed Lunch.<\/p>\n

The ingredients are: 450g minced lamb, \u00bc tsp ground cumin, \u00bc tsp dried chilli, Good pinch of cinnamon, Good pinch of sumac, \u00bc tsp dried thyme, 2 tbsp coriander, roughly chopped, 1 whole medium free-range egg, 75g fresh breadcrumbs and 2 tbsp olive oil.<\/p>\n

For the cucumber and mint dressing: \u00bc cucumber, cut into small dice, \u00bd red onion, peeled and finely diced, 150g feta cheese, crumbled, 2 plum tomatoes, small diced, 2 tbsp fresh mint, roughly chopped, \u00bc tsp dried oregano, 250ml extra virgin olive oil, 2 tbsp water, \u00bc garlic clove, peeled and finely chopped, Juice of \u00bd lemon and 1 tbsp green olives, roughly chopped.<\/p>\n

For the giant couscous: 200g giant couscous, Drizzle of olive oil and 1 red chicory, roughly chopped.<\/p>\n
