Freddy Forster served up stuffed mushrooms with a spicy tomato sauce for a tasty meat free meal on Steph’s Packed Lunch.<\/p>\n

The ingredients for the rice and vegetable filling are: 1tbsp onion, peeled and finely chopped, \u00bd tsp garlic, peeled and chopped, 1 sprig thyme, 25g unsalted butter, 100g celery, finely chopped, 100g sweet potato, peeled and finely chopped, 150g Arborio risotto rice, Salt\/Pepper, 25ml white wine, 300ml vegetable stock, 50g parmesan cheese, grated, plus extra for sprinkling on top, \u00bc tsp Marmite, 1tbsp chives, chopped and 1tbsp breadcrumbs, plus extra for sprinkling on top.<\/p>\n

For the Mushrooms: 4 x medium\/large Portobello Mushrooms, Olive oil and Salt&Pepper.<\/p>\n

For the Spicy tomato sauce: \u00bd onion, peeled and finely chopped, \u00bd tsp garlic, peeled and chopped, 1tsp chilli flakes, \u00bc fresh red chilli, chopped, 1 tin plum cherry tomatoes, 2tbsp tomato ketchup, 100ml vegetable stock, 25g unsalted butter and Few sprigs of basil.<\/p>\n

For the croutons: 1 x Slice Wholemeal bread, Olive oil and Sea salt.<\/p>\n

To serve: Rocket leaves.<\/p>\n
