Simon and Dave served up tasty stuffed Italian aubergines with a Cialledda salad on The Hairy Bikers’ Mediterranean Adventure.<\/p>\n

The ingredients for the stuffed aubergines are: 4 large aubergines, 6 tbsp olive oil, 1 large onion, finely chopped, 3 garlic cloves, finely chopped, 1 tsp dried thyme, 1 tsp dried oregano, pinch dried red chilli flakes (optional), 4 tomatoes, skinned and roughly chopped, 50g white breadcrumbs (ciabatta is good), 25g Parmesan or Pecorino, or alternative vegetarian hard cheese, freshly grated, \u00bd unwaxed lemon, finely grated zest only, handful fresh basil leaves, shredded, salt and freshly ground black pepper.<\/p>\n

For the Cialledda salad: 1 stale ciabatta, or decent sourdough type bread (around 250g), 1 small red onion, very finely sliced, 500g very ripe tomatoes, 1 garlic clove, crushed, \u00bd tsp dried oregano, 2 tbsp olive oil, handful black olives, small bunch basil, leaves only, salt and freshly ground black pepper.<\/p>\n
