Si and Dave served up Mexican vegetable tacos with refried beans and avocado cream on This Morning.<\/p>\n

The ingredients for the refried beans are: 1 tsp vegetable oil, 1 red onion, finely chopped, 2 garlic cloves, finely chopped, 1 tsp dried oregano, 2 x 400g cans of black or pinto beans, drained, 250ml vegetable stock or water, Sea salt and black pepper.<\/p>\n

For the veggie filling: 1 tsp vegetable oil, 100g sweetcorn, 1 red pepper, deseeded and cut into strips, 1 red onion, cut into thin wedges, 200g butternut squash or pumpkin, diced, 1 tbsp tomato puree, 1 tsp chipotle paste (or more, depending on how hot you like it) and 100g kale, cavolo nero or chard, shredded.<\/p>\n

For the avocado cream: 1 avocado, juice of 1 lime, A few coriander leaves and 2 tbsp half fat cr\u00e8me fraiche or soured cream.<\/p>\n

To serve: 8 corn tortillas, \u00bd red onion, finely chopped and A few coriander leaves and lime wedges.<\/p>\n
