It has its origins in the Northern Italian region of Piedmont, where it is usually served with wild berries, caramel, chocolate sauce or fruit coulis.

However, Paul turned to the Ivy House farm in Somerset to get the main ingredient for his recipe, buttermilk. The Ivy House has a reputation for producing some of the best buttermilk in the country and Jeff and Kim from the farm joined Paul in his kitchen to watch the master baker use their products in his blueberry Panna Cotta.

Paul serves his Panna Cotta pudding with blueberry compôte. This is a really good choice because blueberries are unbeatable for flavour. Blueberries grown in a colder climate have a much more structured flavour and tangy acidity than those grown in hot climates.

In today’s third episode of Paul Hollywood Pies and Puds, Paul created a delicious panna cotta pudding to die for.
